I don’t think I am alone in feeling like my life mostly consists of eating, or thinking about, food. Hearing what people had for lunch brings me great happiness, much to the annoyance of the people I ask to describe their food.
Growing up with Indian heritage I was exposed to exciting tastes and scents in the kitchen from a young age. I love to incorporate those flavours into my cooking, and spending time with family in India I got the chance to eat the most amazing food to take inspiration from.
My Indian mama has a saying when she doesn’t have enough of the correct ingredients for a recipe (which she seems opposed to following anyway) she says ‘we can just make it with a little Aubergine!’ Hence the name of this blog. I’m not completely against following a recipe, but my style isn’t really to measure everything out meticulously, more a dash of this and a splash of that, pretty much making things up as I go along.
